2016 Clean Eating Challenge Begins
LET THE CLEAN EATING CHALLENGE BEGIN
Since we are less than 10 weeks out race director Michele Redrow thought it would be fun to start up the Clean Eats Challenge but we're keeping it super simple this year with easy, clean recipes and tips.
How do you get started? Easy, simply check back here on the Perfect 10 Miler blog for weekly recipes and tips to keep you on track and motivated.
First, ladies it's important you decide what your goal here is; 1) lose weight, 2) get healthy, 3) more energy, etc. Just like running a 10 mile race it's important you set goals and make clean eating a personal choice every day.
LET'S GET STARTED
LAST NIGHTS DINNER (courtesy of Larry Redrow)
Larry (my co race director and husband) made this fabulous salad that was more hearty meal than weak salad.
Ingredients: You'll note I don't really measure anything. I like to just toss it in!
Romaine Lettuce (1 stalk)
Spinach or spring mix (small bag)
feta cheese (sprinkle over salad about 1/4 cup)
2 apples (I use honey crisp but any kind works)
1 red onion
Pine nuts (about 1/4 cup)
shaved almonds (about 1/2 cup)
Chicken (Store roaster, is easiest)
3 Roma tomatoes
Chop all ingredients pretty small including chicken. Toast the pine nuts in 1 teaspoon of EVOO. Toss on the dressing below ( or your favorite one) and start enjoying. This makes enough for some great leftovers...it might actually be better the next day!
