I feel at my best when I am exercising regularly and eating right. Eating seasonally, and whenever possible locally, has become important to me as I learn what foods fuel my body the best way. Ever since I started running years ago, I have been improving my diet by really trying to focus on whole foods. I feel my best and I run my best when I eat right – and I find that it really shows on race day. 

Here is a list of my favorite, tried and true, seasonally inspired recipes. The majority of races that I have run have been in the Fall, which is right around the corner! I can’t wait to cook with my first squash this season! Check out my favorite recipes & feel free to share yours:

1.     Spaghetti Squash - I love how this meal looks & tastes like regular spaghetti, without all the extra carbs. Such a warm & filling meal {that’s great for your waistline!}

2.     Butternut Risotto – I am obsessed with the creaminess of a good risotto – add in the sweetness from the butternut squash and it’s even more amazing! This meal frequents my kitchen every Fall.

3.     Vegetable Strew – This will warm your soul & fill your belly with lots of yummy {seasonal} veggies!

4.     Butternut Squash Soup – As if you needed another excuse make butternut squash!

5.     Cheesy Butternut Squash Casserole – This meal is pure perfection – plus it’s topped with crackers for an extra crunch!

6.      Stuffed Acorn Squash – I love the fact that you can get creative with the stuffing in this recipe. Just add your favorite veggies & starch!

7.      Pumpkin Scones – These bad boys tasted like they are straight from Starbucks – only better! A little something sweet to end any meal.
